Banana Bread


This is from my friend Laura Judd's recipe book. She made it like 2x a week when we were roomies.

2c flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp cinnamon
1/8 tsp nutmeg
1 pinch salt

mix together and make a well in the center; set aside.

4-6 bananas mashed
2 eggs
1c sugar
1/2 c vegetable oil or butter
1/4 tsp vanilla

mix well.

Pour liquid/banana mixture into the well of the flour mixture. Combine and bake in greased pans 350 degrees. For bread bake 40-55 min. For muffins, bake 12-15 minutes.

It's extra good with some struesel and pecans!

Struesel:
2 tbs cut cold butter
1/4 cup brown sugar
2 tbs flour
