Lasagna Rolls


Ingredients:
9-12 lasagna noodles cooked according to package instructions
8 oz frozen chopped spinach, thawed and drained
8-10 oz ricotta cheese
1 c mozzarella
1/4 c parmesan cheese
1 egg, slightly beaten
1 large can spaghetti sauce
basil, oregano, garlic powder, salt and pepper

Directions:
1. cook noodles, then lay them out separately on waxed paper
2. combine cheeses, spinach, egg, and spices
3. cover 9x13 pan with thin layer of spaghetti sauce
4. spread about 1/4c of cheese mixture on each noodle and roll up (like a
cinnamon roll)
5. place each "roll" seam down in the pan
6. cover with remaining sauce
7. bake covered at 350 degrees for 30 minutes
8. Serve hot with salad & bread sticks

These look like a luxurious, laborious meal, but are so simple! They make great leftovers as they tend to taste better the next day after they settle a little.
