Quick Dinner Rolls

These rolls are the quickest, easiest I've ever made. I prefer the taste and texture of Cloud 9 Rolls, but in a pinch these are great! They only take about 45 minutes to whip up and bake, start to finish. I also like to use leftovers from these for Baked French Toast Casserole --seriously delicious.
  • 1 cup plus 2 Tbsp warm water
  • 1/3 cup oil
  • 2 Tbsp yeast
  • 1/3 cup sugar
  • 1 tsp salt
  • 1 egg
  • 3 cups bread flour
  • 1/2 cup oat bran (or additional bread flour)

  1. Heat oven to 400 degrees.
  2. In mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes. Using the dough hook, mix in the salt, egg and flour and bran. Knead with hook until will incorporated and dough is soft and smooth. (Just a few minutes)
  3. Form dough into 12 balls and place in a well-greased 9 x 13 pan and allow to rest and raise for 15 minutes. Bake for about 20 minutes at 400 degrees or until golden brown.
