Fajita Pizza

This is a new favorite of ours. It's an easy and yummy twist on pizza, and it way filling!


Ingredients:
  • Your favorite 12" pizza crust recipe, prepared (but not baked)
  • 1 lb. boneless skinless chicken breast, cut into strips
  • 2 Tbsp olive oil
  • 1 green pepper, sliced in thin strips
  • 1 small red onion, sliced thin
  • 1 cup salsa
  • 1 cup shredded jack cheese

Preheat oven to 400. Grease pizza pan and dust with cornmeal before rolling out pizza crust and pressing into pan.

Heat skillet and add oil. Saute chicken for 5 minutes. Season lightly with salt and freshly ground black pepper. Add green pepper and red onion. Cook until the veggies are tender. Remove from heat. Add salsa and blend.

Spread chicken mixture over crust; top with cheese. Bake 15-20 minutes.
