Parsnip Fries


These look like French Fries, but they're actually parsnips--kind of like carrots--and they're healthy, and super yummy cooked like this, as my friend Karim taught me!

About 3 parsnips, peeled and chopped into sticks (like you would cut up carrot sticks)
1-2 Tablespoons butter
1 teaspoon dry Italian seasonings (or whatever herbs you like! Karim suggests rosemary)
2 Tablespoons dry bread crumbs

Saute the parsnips in butter over medium heat, until they are cooked. Add the Italian seasoning and bread crumbs, and stir over heat for a minute more. Remove from heat and serve immediately!
