Ingredients:
Chicken
Pepperoni
Onion (yellow &/or purple for some zing)
Tomato (grape or cherry work well)
Zucchini (summer squash is also nice)
Orange peppers
Yellow peppers
Basil
Oregano
Garlic Salt
Directions:
1. Cut chicken into strips and place in a large casserole dish.
2. Season with basil, oregano, garlic salt and black pepper.
3. Cut onion and peppers into long strips. Cut zucchini & summer squash into coins. If using large tomatoes (instead of grape or cherry tomatoes) cut into wedges. Slice pepperoni into halves or quarters.
4. Cover the chicken with the vegetables and pepperoni. Bake covered at 375 degrees until chicken is done. Then, sprinkle with mozzarella and bake uncovered until cheese is melted.
5. Eat it. It's good! Especially with some garlic bread. . .
