I found this interesting pasta sauce recipe here, and tried it on Shaun the other night. Sadly, my proportions were off the first time--I did a bit too much lemon--but it was still delicious. It's pretty forgiving and easy to adjust to your personal preferences. And it's like a cross between pesto and guacamole--two of my favorite things ever! And it's really quick, easy and fresh. Win win win!
First chop up 4 cloves of garlic. Then zest and juice one lemon and add the juice to the garlic. Add about 3 tablespoons of olive oil and blend these first 3 ingredients until smooth and blended. Then add 2 avocados (peeled and pitted...obviously =). Also add a few chopped basil leaves and a dash of sea salt. Then blend everything together.
Cook noodles (I like linguine) in boiling water and rinse and drain them, and top this yummy sauce over the noodles. Garnish with black pepper. Serve with grilled chicken. Mmmm!
