Wheat Muffins

These muffins are made with half wheat flour and half white flour. They are sweet, light, and filling. My husband is not a big fan of wheat, but he loves these.

1 cup white flour
1 cup wheat flour
1/2 tsp salt
4 tsp baking powder
3/4 cup brown sugar
1 cup milk
2 eggs, beaten
1/2 cup oil
1/2 cup chopped nuts (optional)


Sift flours, salt and baking powder. Add sugar. Combine milk, eggs and oil in a separate bowl and add to flour mixture. Mix with as few strokes as possible. Add nuts. Spoon into greased muffin tins. Bake at 425 degrees for 15 minutes.

*Note: For less sweet muffins, decrease brown sugar to 1/2 cup rather than 3/4 cup.
