Cream Puffs


1 cup water
6 tablespoons butter (people say margarine cannot be substituted, but I've used it and it's worked just fine!)
1 cup flour
1/4 tsp salt
4 eggs

In a saucepan over medium heat, bring water and butter to a boil. Add flour and salt all at once. Stir until a smooth ball forms. Remove from heat and let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Beat until smooth. Cover a baking sheet with foil; grease foil. Drop batter into mounds on foil (I usually make about 12). Bake at 400 degrees for 12 minutes. Reduce heat to 350 degrees and bake for about 25-30 more minutes. Remove puffs and set on a wire rack to cool. Immediately cut a slit into each to allow steam to escape. When cool, fill with filling and garnish as desired.

I like filling these with whipping cream and strawberries, or pudding (vanilla or banana), and drizzling chocolate or sifting powdered sugar over the tops.
