Nutty Coconut Bread
4 eggs
2 c. sugar
1 c. oil
2 tsp. coconut flavoring
3 c. flour
1/2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. salt
1 c. buttermilk
1 c. nuts
1 c. coconut
Beat eggs; add sugar, oil, and coconut flavoring. Sift dry ingredients together; add, beating well. Blend in buttermilk; fold in nuts and coconut. Spoon in greased and floured pans. Bake at 325 for 1 hour and 15 minutes.
Glaze:
1 c. sugar
1/2 c. water
2 tbsp. butter
1 tsp. coconut flavoring
Combine sugar, water, and butter; bring to a boil. Pour hot glaze over top of loaves while still warm. Let sit in pan 4 hours before removing. Makes 2 regular loaves.
