Cinnamon Bread

This recipe is so SO yummy. My mom has made it for years, and she got the recipe from our family friend Helen Graham. Try it. I promise you will LOVE it!


2 cups warm water
1 TBSP yeast
1/4 Cup powdered milk (instant)
1 tsp salt
1/2 cup sugar (or 1/4)
1/2 cup oil (or 14)
1 egg
2 tsp vanilla
5-6 (or so) cups of flour

Dissolve the water and yeast. Add milk, sugar, salt, oil, egg, vanilla and 2 cups of flour. Beat well for a couple minutes. Replace beater bar with dough hook. Add flour (one cup at a time) until dough pulls away from the sides of the bowl. Knead for at least five minutes.

Allow dough to rest until doubled. Divide in half. Take half and roll out to 8" x 12". Sprinkle water on dough and smooth it over the dough evenly. Sprinkle with cinnamon and sugar mixture (probably about 1/2 cup per loaf). Choose the widest end to roll last to help enclose the mixture. Avoid getting sugar and cinnamon close to the edge especially on that end. If it squeezes out it's tasty, but messy and unattractive.

Place in a well greased bread pan. Allow to raise until double. Bake at 350 degrees for 30 minutes.  Makes 2 loaves.

If you want to turn them into braids, make the cream cheese mixture and place it down the center of the rolled out dough.  Cut strips on the outer edges and with those strips, braid the dough.

Cream Cheese Filling for Braid
8 oz cream cheese
1/4 cup sugar
3 TBSP flour
1 egg yolk
1 tsp lemon peel (or dried)
1 tsp almond extract

I love this bread. It's like eating a much healthier cinnamon roll. Mmm! =) This bread is super yummy in the baked cinnamon french toast recipe!
