Mom's Enchilada Sauce

  • 6 tbsp olive oil
  • 1 cup chopped onion
  • 2 cloves garlic
  • 1.5 - 2 tsp chili powder
  • 28 oz tomato puree
  • 1 cup chicken stock
  • 1 tbsp cumin
  • salt / pepper to taste



Saute onion and garlic and chili powder in olive oil until tender. Add tomato puree, chicken stock, and cumin. Whisk together and cook on medium heat for about 10 minutes and add salt and pepper to taste. Use this as an alternative to store-bought enchilada sauce in your favorite enchilada recipe.
