Japanese Chicken


This is from a Pendulum Court recipe. Just find some sticky rice and snap peas and you've got a super tasty meal!

Ingredients:
2 eggs
1 cup flour
6 tablespoons sesame seeds
8 chicken breasts
3/4 cup soy sauce
2 cups vinegar
1/3 cup water
4 cups sugar

Directions:
Preheat oven to 350 degrees. Whip eggs in one bowl. In another bowl, combine flour and sesame seeds.
Dip each chicken breast in the egg mixture, then roll in flour mixture and place in lightly greased 9x13 pan.
Mix soy sauce, vinegar, water, and sugar together. Pour sauce over the chicken breasts and bake uncovered for 30-35 minutes.
Serve with prepared white rice.

Notes:
Okay, so this is obviously a huge recipe. To size it down for a smaller meal, I always just eyeball the flour and sesame seeds that I think will cover the chicken I'm cooking. Tenderloins are great for this, too. Then just use 1 egg instead of 2. For the sauce, if I'm doing 2 breasts, you really only need about 1 1/2 cup sugar, 1/4 cup water, 1/4 cup soy sauce. and 1–1 1/2 cups vinegar. Just taste it and make sure it's not too sweet, not too soy and not too vinegary. You'll get the hang of it!
